How a day goes

Evening prep. Daytime rush.

The stall opens 9am to 9pm, lit from morning through dusk to night. That's three minutes of play, so one more day is always easy to say yes to.

    Knead

    Roll out dough on each spot on the board, knead it, drag a filling on and crimp it into the fridge.

  2. 2From 9am

    Fry golden

    Open the stall and drop puffs from the fridge into the wok. Lift them out while the crust is golden.

  3. 312–2pm · 6–8pm

    Serve the rush

    A customer or two wait at a time, until lunch and dinner bring a longer line and people in a hurry. Keep kneading as you go.

  4. 49pm

    Count the takings

    Close up, pay the rent, spend in the shop, then knead for tomorrow.
